Pretty simple. When eating somebody who is set to come back to life, shouldn't Cho still get feast stacks? He still ate them, they're just coming back to be part of the second course. I think this also could apply to anything else that gives stacks on kill, it's just strange and I'd just like to know... Why this isn't a thing?

No,because apperantly not dying to your point and click 1000 true damage is actually counterplay to your feast stacks

You already have a point and click true damage meganuke that scales with AP, which also gives an indicator for when it will kill, removing any skill involved. What more could you ask for?
