Just a few tips that I've picked up but may help a little.
Blind pick is a guessing game. You could have a favourable lane or you could be in trouble from the start so either practice farming with last hitting or farming under tower when pushed. Anything you can do to lower the chance she can jump onto you is worth doing and farming safely helps with all champions and lanes.
For draft and ranked where you see her coming you grab exhaust as well as the support having it. You have less kill pressure but you have even less kill pressure when you're dead.
Keep a pink ward handy whenever you can. It isn't a magical "kill Akali" item but if she's trying to run away with a sliver of health you want to know which way she's running.
That's the basics but it's important to get the basics down. After that... well, vision is important in any game but even more so when Akali can jump and burst you super fast. Don't fight her 1 v 1 unless you are absolutely certain you can burst her before she can burst you. Have you seen Akali on the map recently? No? Then don't facecheck bushes. In teamfights you need to focus the biggest threat first and that's either going to be Akali or the ADC. Try not to use two exhaust summoners on the same person.
They aren't guaranteed ways to beat her but as I learned a while ago now you don't always have to win your lane. Farm safe, get items and then group up with the team. If you are even or close to even then that's all that matters. Ultimately if your team isn't working well together you're likely going to lose so just do what you can and try to enjoy it.
