ekko is definitely harder to master. (imo_)
Zed lane imo is more fun, he has easy as fuck last hitting (literally (almost XD) never been in a game as Zed where I am not the #1 CSer due to the easiness of his last hitting). His combo feels smooth and also he has a great escape in W in you are judicious with its use.
Ekko on the other hand has a less reliable escape, although i believe all 5 of his abilities (including passive) can all act as a semi-escape, leaving Ekko much more slippery than Zed, albeit with a less reliable escape early in the game.
Ekko has potential for more flashy plays imo; His W has huge potential to win fights, but remember this ability is one of the hardest abilities in the game to land. It's like landing a pantheon ult, except that the hitbox is 1/7 the size. The delay is huge so you must realllllly anticipate your opponents movements; but if you land it, it is mad rewarding.
I've played more Zed than Ekko, and both are mighty fun. Still I think ekko has the higher skill floor and the higher skill ceiling (he is harder to learn AND harder to master).
but why not pick up both ? They are somewhat similar as divey slippery melee assassins with a nice escape. Just pick ekko if your team needs an AP mid, and let's say if your top and jungle are AP maybe go Zed to have a balanced team of AD/AP? Keep the damage types diversified. It can work, but it's disheartening when your jungler and top both pick AD champs and then your mid decides to choose zed XD Makes enemy itemization (for armor way too fucking easy).
