CC'ing or neutralising the incoming attacker who is after a particular teammate, or in this case, an ADC.

Almost all of what does in fights is/can be considered peeling when done defensively.

Getting mother fuckers off your fucking adcs face. Killing them, or pulling them off, or hard cc them, soft cc them, etc...

And that's what I have been doing all along. I've never stopped doing it. I never considered what I could be doing could be referred as and I never even used the word let alone get to know it before. So I wonder what my Draven ADC means when they ask me to peel for them when shit goes wrong.
