I just wanna know the differences between a Standard Jungle Vi build and my weird build here. I honestly CAN'T do math, and I'd like to know if I was losing out by building this way.

why not trinity force instead of hydra ? the crit helps
id personally Switch out the warmorgs for steraks, dead mans, or maybe even mallet to stick better.
why would you build MR. and not armor. Health mitigates for magic damage if u dont want to go full tank. but usually ad damage is sustained damage so you need armor for that. i would build
i dont build frozen tank often. but i feel like it goes well on her. if she sticks to a target its great

You could swap out the hydra for a blade of the ruined king, it synergizes with devourer a bit better.
You literally have no armor and very little magic resist in that build.
I'd substitute dead man's plate for wormogs and get merc treads instead of swiftness boots. That still will give you huge movement speed, tons of HP, and enough armor and magic resist that you can't be focused down.
Your biggest problem is no armor. Any AD dps will shred you even with all that HP. The second problem is that while Sated Devourer is very good on Vi, Devourer itself is not and you give up a ton of early power by going for Devourer over Warrior. You can certainly still build it; I do on occasion. Just take out that Warmogs and build Dead Mans instead and the build looks pretty solid. Perhaps swap out Visage for a Banshees and get your CDR runes runes as well; your build is fairly reliant on not being kited and the spell shield helps with that a lot.
