Are there any good 1v5 champions?
With the teammates I have been getting in ranked recently, it looks like I have to go 1v5.

Illaoi if you want to be literal.
Learn the roaming playstyle for any given champion, it gives you the best possible carry potential if you do it right.

Champions that can feasibly 1v5: Nobody
Champions that can carry a game with 4 subpar teammates: all of them.
Champion pick is very important but tbh if you practice practice practice a group of champs over and over and over, you will get to the point wher you know their kits inside and out, all their matchups and all their strong/weak points.
Illaoi can take a fight outnumbered and come out ahead if you've farmed enough.
Nasus can sit in the enemy backline and make the ADC **** in his pants.
Jinx can aoe rocket crit everybody and their mother for easy cleanups halfway through a fight.
Karthus can actually instakill and entire team under the right conditions.
The right support can keep your entire team alive so you can clean up.
My suggestion would be to pick 2 positions you're comfortable with, 3 champs per role, and then practice playing support with 2 champs so you have a fallback carry for those auto fill games.
(both mages if fed can 1v5) 
Yi/Vayne are "best choices" for pentas.
And it's not just about their damage, but mobility and how they can dash around the battlefield.
Vladimir could somewhat work, but he has to be REALLY ahead to the point where he can bitchslap baron.
