My idea is that all champions have two ultimates you can choose from
More variety, and depending on the game you can choose a different ultimate.
Adds more aspects to the game.

Like HotS? If so then assuming the ults were balanced (and that's a lot of work to make a new ult for 120+ champs that is both balanced and synergizes with their kit), what is likely to happen is that one ult will be good and the other will be bad comparatively most of the time, kind of like HotS.
Mostly though, it's just unnecessary.
