I want a wrinkly old hag as a champion personally. :)
Riot's character design has gone a long way, and that includes tying champions' visuals in more closely to their theme, so unless it makes sense for a character to be a traditionally attractive young woman, that's not going to be the go-to appearance they'll get.
No recent traditionally attractive women in champion releases comes from the following reasons:
Riot is trying to inject a little variety in champion design, and since a lot of sexy women are already in the roster, that precludes new ones being created.
The recently increased focus in gameplay clarity creates a hurdle for the creation of champion whose primary visual feature is being a 'hot babe', as historically they had have pretty simplistic silhouettes, which is something Riot has been pushing away from.
I think new attractive females will be released in the future, but they will be more sparse and less bland.

Matter of perspective, but what skill set would "hot babe" have?
They said in answer to the question 'why aren't there any wrinkly old lady champs?' That they don't release champs to check demographic boxes. They release champions based off an identity from gameplay. Ex. Katrina is an assassin, so she will wait until her enemies are weakened by skirmishing to unload her combo, and her toolkit reflects that. High aoe burst with resets.
So rather than releasing a hot girl just to release a hot girl. They will wait until they have a female champion idea with a sound toolkit who just happens to be attractive.
How it's supposed to work in theory.
