Easy to use champions?
on some of the more mechanical champions im having a hard time winning games with them, what are some less difficult champions to play?

I think that Fiora is pretty strong vs all top laners and can carry the game very easy :)
There are many. Which lane are you looking for?
mostly top mid or jg and less difficult definitely, mid difficulty ones would be cool too

MID: Annie (simple to use, OP results with AOE stun nuke), Lux, Veigar is still strong, Fizz maybe, Cho'Gath (althrough I prefere him on top lane), Xerath, zigs...
TOP: Well, a lot of them. Garen, Darius, Fiora, Gangplank (needs a few games to get used to his playstile, but then he wreks everyone), Tryndamare is OP at the moment due to masteries and items changes, Malphite, Cho'Gath, Volibear, Pantheon...
JUNGLE: Well, Jarvan IV is strong, Vi too, Tahm Kench, Xin Zhao, Diana, Warwick, Udyr, Maokai...
Adc: Ashe. Sivir. Caitlin Support: Blitz. Nautilus. Lux. Mid: Annie. Lux. Jungler: Warwick. Vi. Amumu. Top: Garen. Ryze
Zed/Lee/Riven are pretty faceroll ------> Win
You will only miss Riven's Broken Wings/Ult if you are massively outplayed, but even if you are even marginally competent, you will not miss, snowball and win.

LoL, all of them have enormous skill cap
Let's see, I'll give a couple for different classes; -Garen & renekton are a straight-forward melee bruisers, sporting some damage & durability, but nothing over the top. -Ziggs & xerath are artillery mages, having a.o.e. damage at long range, while lacking the mobility and durability as a trade off. -Ashe & miss fortune are ranged physical carries, more suited for taking down a single target unlike the mages. -Taric & nami are cleric type supports, keeping their partner alive with the occasional buffs paired with crowd control. -Assassins rely mostly on knowing which buttons to rapid-fire-click, usually more fragile than the mages while scaling higher damage than carries; but if I had to pick out a pair that'd be good starting points . . . master yi & vi.
