S7.5 Jhin builds and when to do so?

I've been looking into Jhin and how to build him for a while now and I think I have a hold on things, however I'm just questioning myself because so many builds have this hybrid lethality crit sorta thing going on that it's confusing. I'm a stickler for crit Jhin because he seems safer from the start. My understanding is that crit is for safe, steady damage, late game god, and lethality is for snowballing, and that's about it. So I usually build an item 3508 on him first. Most builds however start with item 3142 and go into an item 3031 , then grab anitem 3508 later in the game. I just want some clarification on what to do, although I fear this will be as confusing as every other thread lol. What makes one start better than the other, or maybe not better, but in what situations would one or the other work better?

P.S. I know this has been made a lot, but I'm struggling to find updated Season 7 builds with evidence of why they work

I always go item 3142 because I feel that without it I won't be relevant mid game where the game is being decided (or ends).

item 3508 feels too weak, slow and expensive and it doesn't start paying off until you get more Crit after. If you're aiming for a later (but bigger power spike) you can build it first. But I don't see much of a point because by the time you get that power other champs on the map 1 shot you anyway.

Ghostblade -> Rapidfire Cannon -> Infinity Edge -> Edge of Night -> Lord Dominik's or Mortal Reminder

Essence is garbage unless enemy team has 3-4 tanks. It's only good as an item where you'd sell something else and buy it for 100% crit in a really long game otherwise. But most games won't go that long and if you had ER early, you'd be awful.
