Maybe because the region doesn't consist solely of Taiwanese teams. For example, Hong Kong Esports.

Considering Taiwan considers itself to be the Republic of China, while "China" considers itself to be the People's Republic of China, it'd be a little odd to have two "China" teams.

So, just like how the UN gave the current "China" the "China" seat, and Taiwan some other seat, Riot gave "China" "China" and completely disregards Taiwan.

Well to be fair the region consists of 3 countries. It doesn't have an all inclusive title like Europe for all the eu countries. Since Chinese region is just China, and Korean region is just Korea, they can get away with those.

Fun fact, Nepal declines Taiwan aid because China offered theirs first.
