Well, it looks like the new champion is gonna be a monstrous gargoyle type demon monster with a heart of gold.

Technically you could count Kled. Before that would be Sol or Tahm Kench, then Rek'Sai

If you're just talking about non-humans and Yordles, then half of Kled, Aurelion Sol, Kindred, Tahm Kench, Bard, Rek'Sai, and then Vel'Koz.

Non-human champions are a rarity in the game, when you tally them all up.
