More like, if Olaf battles anyone/anything, he is guaranteed not to die.

Not quite the same as guaranteed to win, but in the case of a berserker, being not dead means he's generally speaking still going to try his damnedest to kill you.

The prophecy doesn't say that he is invincible, it just says that he will die due old age... XerSai could eat his arms and legs at let him live.

As is often the case with prophecies the path of avoidance fulfills the prophecy.

Olaf fighting stronger and stronger enemies makes him harder and harder to kill, and more likely to die an old man. He thinks he is on the path that proves the prophecy wrong, and yet he is the one actively making it happen. He will become so strong that nothing but old age can kill him.
