They actually don't have pointy ears in their splashes. You're probably seeing the hair pieces and thinking that's their actual ears (like I did initially).
I don't think it's canon for them to have pointy ears, merely the artist's style when drawing human ears.
I don't think they should have pointy ears because they are normal humans. Janna and the yordles have pointy ears in their normal skins too so...
