I just found it weird that after setting himself on fire for many weeks, the only thing burned beyond repair were his eyes...

Eyes are quite vulnerable.
Monks can ignore intense heat and cold with training and enlightenment, IIRC, so this I believe is a magical exemplification of that.
But the eyes are much more vulnerable, and even slight damage to them can render them useless. :/
