How are perceived reworks/VGU by champions? What are the ones that have been witnessed by other people and what are the ones have overwritten old kits? Obviously Warwick, Evelynn or Sion for example are overwritten stories or Xin Zhao or Shyvana have been witnessed. But Poppy? Yorick? Fiora received a hairlift but Poppy and Yorick drastically changed. Did Runeterra magically altered memory for the ones who knew them? How did it go?

I'm fairly sure all the reworks so far have been meant to overwrite the previous characters. So Old Fiora never existed in current canon. I think any references made to the reworks (Sion's joke to Urgot about being too cool to hang out with him now) are noncanon and just for fun.

Fiora is a bit of a special case, since she only recieved a graphics and gamplay update. Her lore was not changed. So you cut argue that Fiora simply got a new haircut.
