Maybe the next Ultimate Skin could be Teenage Annie or Adult Annie? I'd like to see Riot do that, and I don't even play her.
I want it to happen, but at the same time, I don't. Annie is widely toted by the Lore (that no longer is canon) to be the strongest of all Champions in League of Legends. That is why, as a child, she can go toe-to-toe with the likes of Thresh, Gangplank, Rek'Sai, Xerath...The list goes on. To develop a skin where she is older but the same in terms of power (as a Skin must be) would diminish this feeling in my eyes somewhat. Maybe if she were some sort of boss akin to Vilemaw on a reskinned map?
They can't really give her an adult skin on her current model. They would have to make like a whole new champion but with Annie's skills.
