How about a Paladin?

I keep wondering if there is space for a warrior who fights with holy magic (if holy magic does even exist in Runeterra, but it should considering that there is shadow and unholy magic).

And I'm not talking about something like Garen (who just happens to wear magic armor and have a magic sword while even him doesn't know about it), not like Leona (sun magic and more on the tankish side) nor Kayle (not at least her current incarnation who looks like a generalistic angel character, her rework is going to put her under the Ascended category which could mean Sun/Space magic again) nor as Taric (even though he'd be the closest if he didn't use Star magic).

Either make him a Demacian of the Radiant Order who discovers holy magic and channels it in battle and against necromantic/dark arts.

I think the paladin fantasy is fulfilled by the champs you listed - Garen Leona and Taric. There's not really a need to have another version of the archetype in the game, especially since the society that would potentially spawn this kind of character, Demacia, doesn't seem to have a religion or any kind of spiritual presence.

There is the Radiant Order though. While it looks more a militaristic group it really looks a fertile place for such characters, the only limitation would be their hatred towards any kind of magic but even then there is space for some narrative.

I hear you, on the one hand, but I think the reason we don't have one is to avoid the trope. Taric is more interesting than the type of paladin you are asking for because he's tied to specifically Runeterran elements, locations, and factions.

I just find unfair when in fantasy stories there is all different kind of dark magics (blood, necrotic&necromantic, demonic, shadow, dark) but no sign of holy magic, like being good is not part of the universe at all but being extremely evil is.

Star and Sun magic are close to it but both preserve a lot of different negative attributes and characters (see Zoe/Myishia and the pre-imprisonment Darkins), it's like in League you have a incredibly huge grey zone, a well defined black zone and just 1 white dot (Taric).

Just like the dark magic, though, we do have several versions of light magic.

Taric, Soraka, Lux, Janna, arguably Anivia, Ivern, Kayle, Lucian...

And I would argue just like the "light magic," we have no blatant "dark magic," either, really. Yeah, we have demons, but their themes are as far away from "black magic" as Taric's is from "light magic." Even the two necromancer characters don't actually raise the dead for evil purposes like the prototypical evil necromancer.

The problem with your theory is imposing a belief that magic is good and evil, and this obtuse belief that in order for magic to be good, it has to be holy. This is incorrect. Magic is neither good nor bad. It's a tool, it's a clay that can be shaped, it doesn't have inherent alignments. Steel can be used to make armor to defend, or a sword to attack. Steel itself isn't evil, good, offensive, or defensive. It's just steel. Magic, likewise, can be used to defend, to attack, or to do a great deal of other things. It's not inherently anything, because it's not sentient. The people who use magic are good, evil, and shades of gray, but not their magic.

And we do actually have holy magic in the game - Illaoi. It's not trite holy magic like Judeo-Christian tropes of angels and all that, but it is holy magic because it originates from the powers of a goddess.

Leona and Taric are aspects, demigods fueled by Targonian magic.

Since they fight for gods via godly magic, they are both Paladins.
