General Du Couteau
Please make him into a champion and shine some light on talon and Katerina's lore. Plus, who doesn't love a new assassin champion.

I think DuCouteau would be much cooler as a Fiora-esque dueling champion, who is less about parrying and riposting and striking vital areas, and more about fluid movement through enemies, dodging strikes, and outplaying through hit-and-run tactics. A Diver variant of Fighter, to differentiate him from Talon and Katarina, and emphasize him as a sword master.
I would draw inspiration from Orcish Blademasters in WoW, Jamie Lannister from GoT, and Marth from Fire Emblem/Super Smash Bros.
Yeah I like that idea, he could be a very cool champion and riot could do so much with the lore.
The General is a premier assassin; he taught both Talon and Katarina. A duelist wouldn't fit the lore

is also an Assassin in the lore. Not in the game.
is NOT an Assassin in the lore. In fact, he's the opposite. He's similar to Olaf and Wukong in that he wants to challenge himself by hunting and fighting something big and bad. But in the game, he's an Assassin.
is presumably an Assassin in the lore, given his status as a ninja,
too. But neither in game.
and
aren't even fighters in the lore, they're premier scouts, who just know how to fight.
, lore is all about eating, gameplay is all about barfing.
My point is, as long as it's still a thematic fit, as with all of the above champions, the gameplay can be worked into a different sort of playstyle.
Yeah that's right, but since he disappeared he could have started using a different technique and have become more of a duelest then an assassin. Either way I just want to see him become a champion.
He didn't disappear. He was mudered tracking an assassin he believed killed his son
