majority of the time, people who break the meta are just being carried by hard solo carry teams. That's why theres so many shitters in bronze and silver playing off-meta builds complaining about 'muh team sucks check my winrate' when they don't even realise they lucked out and couldve won with any build because their scrub ass got carried previously. The only legitimate way to say your off-meta build works is if you climbed to at least gold with it by playing solo but even then its still luck of the draw and there's a fat chance you didn't do any damage to enemy champions to win that game.
