Kill la Kill and tengen topa gurren lagan are a must watch.

for older stuff, outlaw star ruroni kenshin escaflowne Neon genesis evangelion

as for newer stuff, I would recommend watching the pilot episodes of an anime that fits the genres you like. if you feel you get hooked, keep watching.

Romance/slice of life: Toradora! (good on you, sir!), Say I Love You, Chuunibyou and Other Delusions, Kawai Complex Guide to Manners and Hostel Behavior, Monthly Girls Nozaki-kun.

Action: Black Lagoon (if Tarantino made an anime, this'd be it), Sword Art Online, JoJo's Bizarre Adventure, Akame ga Kill, Katanagatari

Mech/Sci-Fi: RahXephon (Eva without the horrible characters), Macross Frontier/Plus...oh, and G Gundam. Just G Gundam. It's the only Gundam you need.

Suspense/Thriller/Horror: Higurashi No Naku Koro Ni, Umineko No Naku Koro Ni, Hell Girl, Another, Parasyte

Fantasy: Spice & Wolf, Maoyu

Classic: Tenchi Muyo!, Outlaw Star, Rurouni Kenshin (but only up to the end of the Kyoto Arc), You're Under Arrest!

Here are a few I don't see being suggested:

Fate/Zero - An excellent epic where 7 masters & their summoned servant fight for the Holy Grail.

Uchuu Kyoudai (aka Space Brothers) - An awesome feel-good show about 2 brothers working to achieve their goals as astronauts.

Steins;gate - A time travel mystery where a group of friends,led by our "Mad Scientist" MC,unlock the ability of time travel.Founding out it secrets & learning of the dangers that comes if it.

Hrmm so many good shows have been listed. If you like cute heartwarming + a little ecchi try Oreimo 1&2.

If you are a huge gamer_+ like slice o life w/pinch of harem try The world God Only knows.

If you like some comedy in your life try Kore wa Zombie desu ka? 1&2. (possibliy as good as FMP was?)....

oh YEAH Full Metal Panic! Possibly the funniest show of the decade (2000-2010.) I've never laughed so much at an anime in general than i have at this show(even including excel saga :O).

But if u do watch it, just remember the 1st season watch first, then Fumofu(the gut busting funny stuff), then the 2nd season(second raid). That will keep you in chronological order i believe. However, beware the 2nd season seems to have much darker themes then the 1st season xD.

if you like Toradora, you may want to check out Lovely Complex (romance comedy), Say I Love You, and Kimi Ni Todoke. These are all romance intensive anime that i enjoyed. (Lovely Complex was on youtube last i looked, and the other two are on Hulu)

Other anime that i've enjoyed recently are Tokyo Ghoul (a modern classic IMO; superb), The Devil is a Part Timer (hysterical fantasy trope reversal), and Madoka Magica (i'm only on episode 3 so far, but i am very impressed by it). Tokyo Ghoul is on Hulu, the other two are on Netflix.
