Why is Ezreal allowed to use his E even if Thresh and Blitzcrank land their hooks on him? It doesn't seem fair that he gets to do this seeing as how Caitlyn, Graves, and Tristana all get caught in their pulls anyways. Can someone please help me understand why he's allowed to do that?
Ezreal's displacement works a little bit differently from the other examples you mentioned.
For Caitlyn, Graves, and Tristana, their displacement moves them from point A to point B over a short period of time. Thresh's hook and Blitzcrank's grab can interrupt movement patterns like this if they connect.
Ezreal's displacement is a blink, in which he moves from point A to Point B instantly after a brief channel. The process of the actual displacement is instant (like flash) and cannot be interrupted and any cc will be applied afterwards if it lasts. You can still pull Ezreal if you can connect to him before the channel time finishes I believe.
Because he is ezreal, the Ultimate kiting ADC. Keep in mind he really doesn't do much damage compared to other ADCs.
Pretty sure you're able to flash these too. His E is meant to be Flash with an attack on it.
