There are a few champs with terrible default recommended items.

Most are a mish-mash of solid buys and unnecessary psuedo-gold sinks.

The best advice one can give is spend some time thinking about items and how they interact with the champions you are playing... there are usually 2 or 3 that a champion excels with (like sheen on Ezreal, or Spirit Visage on Mundo), and those are the ones you absolutely want to buy.
After that, look at your opposition and what kind of damage they do, then buy to specifically counter some aspect of them. On a physical damage dealer against a lot of magic champions? Hello Maw of Malmortius.
Some experimentation and you'll pick up where the Recommended deviates from what is effective.

Not at all, the recommended items are actually pretty viable in most cases. But you have to put your enemy's team composition into perspective to properly build against them. For example, if you put Vayne against Garen. Normally, you'd be concerned that her damage wouldn't touch the Might of Demacia's healthbar being that he's build so much HP and Armor. In that instance, you would want to go with items that give you armor penetration, such as item 3071 item 3036 and item 3142 to crunch through that armor and help those silver bolts do their thing. All in all, the entire process of item building is extremely situational. Hope this helped, good luck!

Nope. The recommended item usually are the ones you would want to be buying on those champions. There is good reason why Riot puts them on there; they work well with champion's kit and are safe options to buy. You are fine to buy them, especially if you have don't know what to get yourself. There are some exceptions, like how Riot was pushing some new items, even though they didn't work out well, e.g. item 1083 (Tip: You, ExCaLx3. Never buy Cull). But they are generally solid choices.

As for this, "but sometimes i get flamed", don't worry about it too much. Whether or not you may or may not have built a less than optimal item; that's not what we are paying attention to. There are going to be a lot of people who don't understand and, to make up for their lack of understanding, get themselves inflexible ideas of how things "should be". And these people, when the game doesn't go the way they want, may flame you for not building the way that one MOBAfire guide they read said to build. For example, I got "flamed" for building Athene's instead of Morello's because God Forbid I would get some Magic Resist for the Magic Damage I was taking when I have the gold to easily buy the more expensive option.

Recommended items are a good starting point, but not always optimal.

While you are learning champions item builds, I would probably look at what professional and/or higher-tiered players are purchasing and trying to understand why those items are taken.

I would recommend using Probuilds.net and champion.gg as resources.
