You listed 4 bruisers. Bruisers usually build 2-3 damage items and 2-3 tank items. That and their high base damages allows them to have enough damage to be a threat, but not as tanky and more vulnerable to being cc'd.
Assassins and marksmen usually opt for 6 damage items.
A full built assassin will completely outdamage a full built bruiser, but lack the durability to remain in a fight longer than assassinating the enemy carries.
Jax has been a problem since his creation. He falls between OP and underwhelming between chunks of time, because he is so item dependent. Do you happen to remember Jax before

Shyv gets free stats from her passive now. Another champ that has seen a lot of both spectrums.... She stayed in the underplayed category for a long time, i doubt riot has really looked into a safe way to nerf her whilst keeping interest in the champ. I mean, if she can't have moments where she feels like a dragon then there isn't much appeal to playing her.
Olaf was legitimately one of the lowest winrate champs after he saw a slew of nerfs from pro players stomping the championship scene. At this patch i really don't have a lot of problems with olaf. If he can't snowball toplane then he can't eat the enemy adc for dinner because he will lack damage OR lack survivability.
IMO Riot hasn't clearly defined what makes a good assassin. They usually think of Zed when they try to direct you to a "good" assassin, but most of the other champions that are labeled assassins are not in a good spot or have a ton of issues. Plus, riot hates the (feast or famine) trope that surrounds assassins, and I think that they are wrong to do so. Everytime riot releases a buff to champion mobility(
) or creates another adc with a dash, they indirectly nerf assassins.
