So since you have to get an S and above to get a token for mastery 7 (S- doesn't work), I wanted to know if you played your champ in a different lane that's more unusual for the champ, would you have an easier time unlocking an S rank? Any experience with this?

Top lane. Eventually, I got it.
Playing off meta makes it incredibly easy. I main Top'Sai and I get S- or better nearly every game. I do very well consistently, but still.
Well, you're compared to other performances on the same champ/role combination, so if not many performances exist, it can be easier. That said, most off-meta champ/role combos are off-meta for reason, so you'll have to overcome that reason and still manage a decent (but perhaps not amazing) performance to get an S or S+.
