Any champs that you just can't play against no matter what?
For me, these champs are LB, Irelia, and Draven. I don't consider any of them to be OP, but I just get destroyed by them no matter what I pick. I'm horrendous against these three matchups.

Irelia is op as hell. she still top 5 in top and mid, for over 9 months, she is a massive lane bully that can solo kill you with the smallest lead, very few champs actully can lane safely vs her and even then she outscales most of them
I hate Tristana. She's so frustrating to lane against. She just hits you with her bomb and auto-wins trades, and her ability to get super-aggressive for all-ins and get out means if you screw up even a little bit, she gets fed. She can push her advantage super hard and easily shoves you under tower, waiting for her moment to all-in you.
Illaoi. Help tell me, does she have ANY lane counters??????
As an adc main, Blitzcrank used to be the bane of my existence (I know I’m bad) but I learned to dodge pull! These days Jhin (underestimate his dmg), zed (press R and die feels bad). I have a friend who hard ints to Heimer every time.
I think this a good place to mention Yasuo. He is always insane when played against me, but when he is on my team he is crap what gives.
LeBlanc scales awfully. In most cases, she has to get an early lead and end the game before she gets out-scaled. Leblanc also has poor waveclear, she and cannot be aggressive if there's a huge wave; force her to use her W (the dash) to clear waves. If she can't get an early lead from you or from roaming, the game becomes harder for her.
In my own lane, Neeko. If she's not laning against me, I'm fine with her in mid-game and later, but in lane, I just cannot.
In general, no, not really. There are a lot of champs that I find frustrating when they are snowballing ahead, you know the usual suspect, Yi, Yasuo, Vayne, etc., but I can still play against them.

Katarina's getting VERY close; And she dominates two of those you mentioned.
The 'small' fix recently to shorten her shunpo times to dagger drop pretty much put her in a situation where a GOOD Katarina can never be skill shot, can erase people with minimal effort, and roots are ineffective because of the range of her R and pace it kills.
(Try winning vs a Good Katarina as Morgana; She does enough damage to both obliterate your shield, kill you, AND have a good 800-900 damage left over in case she flubs up. You can hit Q, ult her, have shield up, but unless you have Zhonya's, she's going to kill you before ANY of it matters)
