red form normal leth pyke aint do jack shit to them
So I thinking should I go tank pyke instead ?
I there a way to build against a tank as an assassin ? . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .

Tank Pyke used to be a thing. It got nerfed to hell because the devs want Pyke to be squishy at all times. It's really not viable anymore since most of your kit scales with Lethality.
If the enemy is super-tanky, you're unfortunately going to have to play like a support. Instead of looking for kills, you need to be punishing aggression, ready to slow and stun anybody who comes after your carry so they can kill the tanks. Consider items like a Last Whisper upgrade on top of your Lethality to get you as much damage as possible, but any assassin would struggle against that sort of team.
