I recently played with a Katarina on a second account and in the game we were playing (not the one in this clip) thought they were scripting and it made me curious to go through their games and found this. Thoughts?

That right there is called luck.
Sion's Q is very easy to walk out of. Using Shunpo without a dagger around is generally a bad idea, so waiting until the dagger had fallen makes sense. If he had been scripting, he wouldn't have been walking around in Xayah's ult before using Shunpo.

Her dodging the Xayah ult is luck IMO.

It's neither luck or scripting.
She cancelled her ulti because she wanted to dodge Sion's Q.
She also wasn't trying to dodge Xayah's ulti, she was walking around after walking out of Sion's Q because she wanted to pick up her dagger that was there. She probably wanted to use the circular slash to damage Aatrox the instant he revives, but mistimed it.
