I want to be able to change my summoner name and remove everyone from my friendlist without my friends finding me. The reason for this is that my IRL friends give me ladder anxiety, and i rarely play with them anyway. I have already tried this but they found me through lolking's match history. Is there a 100% failsafe way to do it?

You could always try being honest about it and tell them to stop. That way you don't have to try being sneaky.
It's been a while since I've played, but I'm pretty sure there's a block list under the friends list. Add their names to that and they can't send you friend requests, and if you happen to bump into them in a match they're auto muted. No need to even change your user name
I'm not sure if paying for the RP to change your name alone will prevent them from finding you on Lolking if they've bookmarked it, since I'd guess the ID account # remains the same.
It might be possible to contact Riot support and see if they'll change things for you (namely the account number, along with the name if you pay for it) if you explain your situation.
How do they give you ladder anxiety? You could just not play ranked with them, and only play normals.
