I haven't really ever had a problem with LB. It is kind of obvious when she is going to go in on you and she can only move in a linear direction to you and has only one place to return to (pre-6). Her "unlimited mobility" is not unlimited. She has massive mana problems and only a skilled LB player will truly get away. 
<----------- These champions have much more problematic mobility, either because they have no "real" cost or it is a "stronger" mobility tool, Fizz's E for example. Yes LB gets some good mobility but, I mean, come on, it SHOWS you where she HAS to return to if she is to return. Zed has something similar to that but since he can have multiple shadows up rather than LB's maximum of maybe 2 return pads at a time I find Zed a much bigger pain.
LB is much more manageable now that DFG was removed, but I agree she has ridiculous mobility.
However, on the other side, LB has shitty waveclear and pushing. Pick someone that ultra pushes her lane and/or makes her waste her mana so she cant roam. Malzahar and Heimerdinger are good picks.
Assasins, unlike Riot wants you to believe, are all about counterpicks, not plays.
I don't really mind LeBlanc having stupidly extreme burst (3.6 * AP lol)
but I DO mind her having that ridiculous damage while also being the safest champion in the game.

can burst her back. The more fed she is, the easier he can burst her.
