You actually answer your question in the second statement. If she gets your spirit. Illaoi is very vulnerable to people with loads of mobility. I main viktor. I can run circles around her as long as I dodge the initial grab.
Well this really depends on who you play. Who do you main in the lane where you face her?

Don't fight near tentacles. That's where most of her power is.
If you can't do that, DON'T. The game isn't balanced so you can duel any champion using any other champion. Some champs will just straight up lose to her. If you find you are playing one, play passive.
its called baiting. Give her seemingly high chances of pulling off her abilities and skew the odds rapidly. She has low mobility and relies on moderate speed skillshots, give her an opportunity to blow her e q w combo on you, get jungler to gank, use mobility to dodge her ult, eat her alive. Don't just stand there and melee, keep moving at all times, don't let her heal with tentacles.
Pretend she is a fly. Build tank and ignore her. Practice dodging the pull, play Illaoi, know when they will pull and anticipate it. And right when you would throw it, dodge down or up. Always have a plan of where to dodge.

You have few options with her E. Stay behind minions, because her E stops at the first unit it hits. Second, if she grabs your spirit, poke her. It reduces the time of the spirit. As with her ult, just walk away.
I haven't tried those champs against her but have played as Nasus, Renekton, Shen, Vladimir and Swain. These champs do well against her, as Vladimir its almost a joke how easy it is. Even if she rushes a Spirit Vissage i could still kill her.
I personally like to play shen vs her. He can deal with all her abuse and after an item or 2 he can 1v1 her.
Her tentacles are everything, if you can hit her away from them, fight her away from them you will win. If you cant, then you are left with 2 options. Option 1: chain cc and burst. Option 2: If she ults, walk away. Wait her ult out then reengage. *If she gets your spirit walk away or try to poke her. FOR THE LOVE OF GOD DO NOT FIGHT HER OUT RIGHT. She gets off a lot of damage and heals a lot if she hits you and your spirit.
