Can someone answer this for me?
So i was playing as jhin in normals and I went 31/0/20 with 200+ CS and got a S- i have a screen shot of it but im not sure how to post it in the forums.

You need to upload to a different site (ie, imgur, tinypic, etc) and post the link.
For why, it could've been a number of things.

pretty sure cait and teemo were int feeding, but still impressive stats if you pretend it was a real game
no wards, but you still should have got an S+ for this.. i mean come on.. 30+ KDA?
Only 215 cs in a 38 minute game, you could easily have had much more cs. Also you only placed 12 wards, and one pink, over the 38 minutes, low there too. Upgrading trinket may or may not be a factor idk really. Also Jhin is a popular picks right now, so you are being compared to a lot more games than on most other champions. I can't check objective damage, but that also have been a factor.
Everybody needs to learn KDA is not the only factor that matters. Just because you did well on one part of the game doesn't guarantee success overall. It's like acing the multiple choice portion of a test and expecting an A+, you could miss a short answer question and end up with an A-
