Sustain or winning lane against a stronger opponent?

Hey guys, I'm new to the forum. I was just wondering if I can get some opinions on methods to sustain or even win lane against an opponent that is not necessarily a counter pick, but is strong against you. For instance, last game I played top lane LeeSin against anEkko . I was having a very hard time farming against ekko early game with his insane amount of damage and pokes (not sure which key is his spinning top ability). As Lee, I found that regardless of my positioning I was unable to efficiently farm except for missing every other last hit because of ekkos mobility and the CD of my ranged Q. For those of you that are familiar with Lee top, I was able to sneak in a few of Lee's Es while also W'ing to the minions closest to my turret in order to avoid ekkos ranged attack. Additionally, we had a kindred in JG who would almost camp top lane, so I was able to farm for a few waves.Other than that I had a difficult time engaging that son of a gun without falling victim to his crazy early dmg and progressing tankiness this season. In the end I started playing very safe and ended up with like a 10/3/5 record before our team forfeited. I didn't necessarily feed, but I wasn't really able to help my team with ekko tanking turrets and triple killing most of my teammates.

The whole point of this discussion is to ask you guys for methods you use to help yourself at least sustain lane while you wait to get closer to your end game build. I was thinking the best thing I can do right now is farm since I am unable to take tanky ekko with a champ like Lee Sin top in a 1vs1. The problem is some champs like ekko are hard to farm against in my case, I wanted to know what methods you guys might use to help yourself sustain lane. I was thinking instead of sticking to just building your attack damage items as you lane early game maybe a better method would be to buy items that help you farm more efficiently. I was think maybe building item 3087 or something along those lines? Let me know what tactics you guys use besides getting early ganks and poking (if you are able to position well) to help build your champ or at least sustain lane early game. Thanks!

P.S. I'm new to all the game knowledge of really understanding the meta, but I have been studying many champs and their strengths and weaknesses in order to really get a grasp of counter picks or at least understanding why champs are built a certain way item wise. Sorry if my idea is not very succinct, but thanks for those of you that take the time to reply! Your input is much appreciated.

Lee Sin Top used to rush Ravenous Hydra for sustain, burst damage and waveclear when it was more common.

I'd probably build a Hexdrinker first for damage mitigation before building into Ravenous Hydra for sustain in that specific match-up.

The tip to taking down a stronger opponent largely depends on the mental and strategical battle, especially if it's a solo battle. One tip for especially lower leagues is to note your opponent's arrogance. If you can take advantage of his cockiness, you can get kills. For example, if the enemy ekko was diving a lot early game and you engage occasionally, but you end up a bit low, you can take advantage of his confidence to kill you under turret. In early game, ekkos dive for the kill due to their ult. If you can evade their burst enough to let the turret lower them, then they will use their ult. If you did not engage them and let the turret do the work, then the health they get back won't be enough, allowing you to rek them if ya have your health. Basically, you outplay them by learning their characterisitics. If the laner plays safe by river, you can use the chance to gain farm. Some scare you by harass, but the trick is to look at the cds and do fake engages. If the laner is aggressive, you can set up a gank by letting them lower you and make them lower their guard. It's all about analyzing the moves they make to figure them out. When i go tankko, I try to scare the oppponent. I buikd iceborn first, so I have not so great a health bar. I do this first to give them a sense of fear that I can kill them easily, so they hesitate to trade. When I escape ganks, it makes the jg waste time and in the end, it feels hopeless for the enemy. I'm not sure if all do this, but I try to crush top to be seen as a threat in late game so my team can take the enemies out. One last tip, when a tankko goes passive, he probably placed a stun.
