On prinicible, once I'm annoyed, I don't bother with league, period.
That said, if all I'm looking to do is relax and take it easy, not necessarily relieve stress, I'm playing Morg mid. One of the most easy going lanes I can play. Just passively farm and then just Q and walk away if someone engages. I've gone a few games without being killed like this, although recently I've been taking it more seriously than I should. I'll immediately regret that decision if the enemy mid laner locks in Yasuo or Azir, but thats another story that has no bearing here.
I got two.
Garen, just because it's my main, I can shut down my brain and act by instinct, I know precisely what I can handle and what are my limits. It's relaxing. Plus it's my main, so I'm also more likely to win, which is just pleasant. I try to avoid doing that in Normals, though, because it's really not fair for the people against me (my MMR in Normals Q is around Bronze 1, whereas my MMR with Garen is around Gold 4).
Singed, because this champ is just hilarious. You run around, you ignore both the enemy team and your team, you dive 1v5 under tower, and somehow you still survive. And you're top CS in the game without even trying. You don't even try to fight, and yet people chase you and so they die. It's FUN.

For me its Yasuo. Nothing like going Yasuo Adc with a friend and subsequently destroying the enemy bot lane. Especially with a Blitz supp
Jax The ult passive sound effect is satisfying by itself. Build atk speed to hear it more often and beat up everyone in sight ^^
For me Its Udyr. Even though hes not mechanically challenging, I get to unwind, beat people up in 1v1's, tell people to "Get the fuck off of my screen" and breach the gates while my team is being boosted banobo's.
