I get matched up against higher elo teams. Why?

The most obvious one is the most recent match. I'm in gold 2, and yet I went against a plat III/V. Why am I going against higher elo teams? I don't understand. Can someone please explain it to me? Shouldn't I be getting equally ranked teams?

You're doing really well in your rank and matchmaking is giving you the opportunity to move up a little faster. On a really long win streak, as a silver 2 player, i've been matched up with lower plat/high gold players....Probably the most intense game I've ever played, I lost but I was happy to even be keeping up with anyone. And right afterwards I went back to normal matchmaking

It might be due to the fact that your MMR is around the same as theirs. In more plain text, you are climbing the elo ladder steadily and they are falling down steadily.

I was matched against Gold 3-Plat4 players while I was still in silver. Then again I was getting ~30 LP per win until I reached gold 5. Then I promptly quit ranked again because fuck ranked I'd rather screw around.

I think it matches you against people of similar MMR. So maybe their MMR is on the decline and yours is going up at the same time. Their league isn't necessarily indicative of their skill.

Your hidden elo is higher than your ranked elo. This is a good thing as it means you'll climb faster. Nothing to worry about.
