What is considered an unhealthy Winrate?
Just curious. I see a lot of people complaining about 54% win rates and things. 50% seems like a fine winrate to me. Thoughts?

Anything more than 5% off of 50% is potentially unbalanced, but that alone is not a reliable indicator. Don't make judgements based on winrate without also having plenty of other data to back it up.
Depends on if you are trying to climb or sustain. 50% will sustain you if your division / LP match your MMR. 55% means you are climbing, but slowly.
Generally 55% is considered too high. That's a 10% deviation from the theoretical average. Similarly, 45% is generally the breaking point for a champion to be considered underpowered.
That said, some people will claim a champion is overpowered based on certain things.
Lee Sin, for example, is an early game tormentor who can ruin a lot of games if he gets out of control early. That leads a lot of people to thinking he is OP due to his ability to warp the game as a strong early game can easily snwoball other champions to a great late game.
Same with Kha'zix before they destroyed him. And just about any other early game champion that has been nerfed and rebuffed and nerfed again, LeBlanc and Pantheon included.

for higher winrate as long as Banrate below 2% and Pickrate below 5% seems fine...
The higher the pick-rate, the more deflated the win-rate. This rule will tell you how a champion is really doing because their pick-rate can give a reasonable guess of their true strength.
If the win-rate is low, but their pick rate is absurdly high, this is to be expected. If the win-rate is absurdly high, but the pick-rate is also absurdly low, it's likely this is a reasonable win-rate because they are simply niche-picked. If the win-rate is still high after having a 5%+ pick-rate, you can get suspicious. If the win-rate is still going strong after 10%+, expect some nerfs within due time.
For reference, anything outside of the 48-52% range can be considered unhealthy.
above 70% winrate and below 20% win rate. if a champion fallse under these catagories there is something wrong somewhere.
I'd say any winrate that inflates hugely after one specific kit change or item intro.
