So I hope this is the right place to put this, anywho, I basically stopped playing for a few years and lots of new items are in and old ones gone and some changed drastically. How does one, if one even can, spec for massive mana regen anymore?

If you are specifically looking for the mana regen stat, you are limited to support items. Just build as many items as you can out of faerie charms.
Catalyst, lost chapter, and morellonimicon provide alternative means of restoring mana although do not actually provide mana regen.
