I find the most fun play bruisers like Darius, Fiora, Jax, Yasuo and Renekton; however, it seems that as much as I'm likely to smash a tank in lane, if they rush sunfire cape and buy dubious amounts of pots, it becomes about 15 times harder to win the lane. Are there any ways to get around this early game 180. Not to mention once they get sunfire and/or a couple of ganks they can shove me out of lane with ease.

Depends on the tank.

If it's an AP focused tank, like Maokai, Malphite, Mundo, or even Sion, just rush a Hexdrinker. Then go into Black Cleaver before finishing Maw.

Not really, just wait until late game for them to eventually get beaten by the DPS of an ADC. The best thing i can say is get a sustain item, even just item 1053 and try to out clear the wave with an item like item 3077

its not really possible to out-duel the AD bullies consistently with tank purchases. it just doesn't work that way.

eventually a strong AD build will overcome any collection of tank items in a straight 1v1 due to the difficulty of trying to CS with nothing but armor.

Unfortunately without something as specific as a replay all I can say is: pay extra special attention to trying to control the rhythm of the lane. Freeze when you need to freeze, push when you need to push. The tiamat items are especially key in pushing and gaining a CS lead if and when your tank opponent ever leaves the lane. Any real "tank" has to leave the lane to accomplish the purpose of being a tank: disruption, peel, initiation.

Be mobile & respect your opponents power spike moments. If the tank opponent completes his sunfire realize that you dont want to get in a continuous standup slugfest. Use your poke-disengage tactics & wait for your jungler.

If youre playing darius you should have phage and caulfields minimum by the time the enemy tank has sunfire cape.

If you lose to tanks as darius youre a boosted bonobo or their jungler really loved them. In any case, always finish bc first, youre innately way too tanky for tanks on their own to deal with anyways.
