I was planning on buying some champion's that can get me up to Gold or Plat. Is there any champions that are easy to climb up ranked? I bought Veigar but I haven't used him in ranked. Give me champions that will help me.
honestly, whatever champs are the ones you enjoy the most
comfort picks will always beat ( in most scenarios) a lot of cookie cutter sheep. if you're good at it.
I probably missed a few, any champion that is good a carrying and winning the game on their own

A champion will not win games for you. Only mechanics will.
Tanks win games, you should main one. If not, main any other champ that's great at carrying such as 
(she's known for it)
Even though I dislike it when people use a champion for the sole purpose of winning, I would argue that 
top lane will carry you far. Try it out in a normals and see what I mean assuming you already know her kit, otherwise learn her basic combos on your own and try her out in both mid and top to see what you like. She's pretty damn reliable if I may say so myself :P
