Patches are typically every 2 weeks, not every week.
The vast majority of patches don't feature champion reworks, so you can continue to play your one champion and the experience will be roughly the same. The overall meta might change slightly, but if you only play one champion you should be used to playing against a variety of different champions anyway, so the change in meta champions from patch to patch shouldn't be an issue.
Most of the time when champions are nerfed, it's because they really were overpowered (often evidenced by being pick/banned every game). In theory, the nerfs just bring them down to a ~50% win rate, so in the hands of a skilled player (e.g. someone who only plays that champion) they should still be able to have a strong impact on the game outcome, it'll just be more dependent on your skill rather than the champion you picked.
They do occasionally overshoot and some champs get gutted pretty hard, but usually they eventually get compensating buffs to bring them back towards the 50% line. That patches come every two weeks means it can be a long two weeks for those on heavily nerfed champs, but since they do come regularly people usually don't have to wait months in the hope their champion will be remotely viable again.
