What's wrong with matchmaking for me?

I'm was diamond last season and I'm currently platinum 2, yet every ranked game I'm getting matched up with golds and silvers. It's been doing this ever since placements and I have no idea why.

Looking at my op.gg profile I can clearly see that despite my solo MMR being 2000+, the average MMR in most of my games is in the 1600s. Thats a difference of 400 MMR.

If anyone has an explanation for this I would greatly appreciate it as I currently feel as if I'm cheating my way into diamond.

Well op.gg and similar just estimate your mmr, and is known to be particularly confused around the start of your ranked season since it doesn't handle the ranked reset well. It does seem a bit odd that you're like in a different tier entirely than most everyone else since you don't appear to be duoing with anyone, but ranks are just a cosmetic overlay to mmr instead of actually mattering.

What sort of LP gains/losses have you been having? LP gains/losses depend on your mmr/who you're matched with/against, so if for some reason you are getting put into 'easy' matches relative to your actual mmr, your LP gains would be correspondingly smaller (and so don't feel like you're 'cheating' your way to diamond, as you'll need to win a whole bunch in a row compared to someone who regularly playing with diamonds who gets there with a 50% win rate).
