Because the current C9 didnt get together till week 6 or 7 and they had almost 0 practice time. Every match though if you go back and watch got closer and closer and they were playing better and better. The current C9 finally has about 2-3 months under their belts and are meshing finally. Thats why. As far as the pick... yea i dont know.

The reason why Huni picked yasuo was because they saw Balls as the weakness of the team, and they decided to try to fight C9's strength (sneaky) with backline dive with yasuo. They trusted Huni to at least go even against balls, and the strategy did work, but in the end C9 came out with a triple threat that nobody expected, and after recovering from their loses balls and incarnation practically 2v5'd fnatic and got balls a penta. Going to the first thing you said, C9 is improving through hard practice, it wasnt so much clear that they would do well in groups as it was seeming like they would, considering that they had been reverse sweeping and improving game by game in the regional qualifier. Basically the more games C9 plays the better they will get.
