I recently read Xin Zhao's lore for the first time and wow. It was great how much insight it gave me into his kit. I could totally imagine him dashing into the enemy lines and fighting multiple Noxian prisoners of war at a time. It also made the Viscero Xin Zhao skin make sense. Xin is one of my favorite champions and I climbed from Bronze 3 to Bronze 1 thanks to him.

I don't use ahri but I like her lore and how she accidentally acquired a moral compass.
Both for how much (time-wise) is broadly covered and how much you can toy with it.
Who was her mother?
Is her father's killer really dead with all the necromancy available in the world? (I actually made a champ concept with that one)
Who were the men with J4? His Elite Guard or a group of dragon hunters?
Why was J4 pursuing that particular dragon, if that dragon was spending all of his time pursuing Shyv and her father? (Besides being a convenient plot device)

Turned evil by her sister Kayle's and their family's betrayal and power hungry ways. She just wants the government to have a lesser hold on the people.
Inspiring in a way.
Lissandra's lore is absolutely fabulous because of how long she's existed and how much effort and patience she's put into ruling an entire Freljord clan, and how refined she is despite her years.
Right now it's hands down 
for me :) and that character actually has unique interactions with his brother
