Glitch in ranked time limit
I had 8 seconds left to choose a champ. and it exited and told me I was removed for not choosing. I had 8 seconds left! wtf.

Not a bug.
What happened was you had a lag spike/packet loss while the previous person was picking. The game did not know they had picked, so to you it showed that they simply let their time run out. When it was then your turn to pick, the time was incorrectly displayed.
If the enemy allows their time to run out instead of picking, you might want to be safe and pick quickly in case this happened.
