If Azir never died
If azir never died, would shurima have taken over all of runeterra? That would also stop the shadow isles from forming im pretty sure and would've stopped morde from becoming powerful right?

No. Azir would not have expanded his kingdom with the looming threat of the Void. If Azir did not die he would have continued to feed his armies and Ascended to the Void in attempts to save Shurima.
Azir dying meant that armies were no longer gathering to face the Void head on, meaning the Void could not feed, leaving the Void rift alone in the baron desert was the best thing that could have happened. Plus when Azir died his death took the Oasis of Dawn with him, stopping all water flowing through Shurima, ensuring no living being would get anywhere near the Void rift.
If Azir lived, humanity would have been doomed.
