It's a toss up between Lightbringer and Deathfire grasp :P
There's so much good music for League, but honestly I think my over all favorite theme is Taliyah's. Truly captures the essence of the desert's beauty, and a distinctly different take on Shuriman styled music than Azir's theme. I can listen to it continuously and never lose that feeling I had when I first listened to it.
I love the themes for Sion, Poppy, Kindred, Ekko, the Star Guardians and more, but Taliyah's just takes the cake.
Ignoring logins since I think that'd be unfair, the entire motif for Dominion. Really fits the pace of the mode. The Kalamanda story is my favourite bit of lore in all of LOL, which is part of the reason I was so unhappy when it was made non-canon.

I like the slow jam of DJ Sona (believe its the purple form)
Lulu and Shaco's Quirky Encounter captures those champions essence quite well I think.
