I personally really love the splash art updates. They truly capture the feeling of that skin in the environment that they should be in. Anybody have any idea which champion splash arts they are updating next.
I'm also hoping that they do a Rammus splash update soon, I think that he could have some pretty badass splash arts.
They said they're working on new splashes for Miss Fortune, and they mentioned Katarina when they said they were updating Maokais, so expect hers soon as well.
Rammus was stated to be high in the VGU tier list by Reav3, the head of the ChampUp team.
There were also several others mentioned, which are included, for example:

… and a few others! These are just the absolute top tier after Urgot & Evelynn hit the PBE/Live and the list also gets significantly changed over time via updated highest player request and a lot of other Riot internal factors.
Rammus currently has quite big changes, which actually just freshly hit Live and it was stated (I think it was Reav3 or Meddler), that changes like those don't hold Champions back from getting relaunched, in case Riot sees much bigger thematic potential. Other big examples for this are Akali & Cho'Gath.
Riots current approach is to update skin splashes of Champions, that already got a modern VGU/VU in the past and didn't receive them directly, like it started with Poppy & Shen.
So below you can see the Champion pool in random order, which you probably can expect to be updated next, in case Riot isn't changing their approach philosophy in regard of this topic.
