Jungler Players in Co-Op vs AI

I'm a very new player, only been playing for a few days but for dozens of hours. I'm playing vs AI to learn the mechanics and learn champions' abilities/skills. I know I was guilty of doing it with Ivern because I wanted to learn his abilities. But jungling in Co-Op vs AI doesn't work since the AI do not jungle. There will always be one lane with 1 v 2. You can't farm gold with minions because two enemies with full health, you're not going to even try to get close to them or they will lock you in with one of their abilities and both will destroy you so you can never lane push. Sure the jungler can provide more abilities in late game from farming the jungle but only if the person playing 1 vs 2 is a smurf or really good. I was lucky enough that while playing Ivern, there were people that could handle that but as a new player, no way can I handle 1 vs 2 even if they are AI bots. So having a jungler when you play against AI always leads the game being at a deficit. I get that they want to learn to jungle and practice but it's bad for the team.

There were also times when this jungler would help the mid lane but still couldn't push far enough or take down a turret. I'm stuck in top lane watching two AI bots farm minions cause I can't do much other than die many times if I try to engage them. Also in Co-Op vs AI, you obviously can't see what the enemy AI champions will be to offset them. I hate when I'm in bottom against Miss Fortune, Lux and/or Ashe. Their range is so great that they hurt you from afar and if you don't have a ranged champion, you just get wrecked.

I know I should play 5 vs 5 with real opponents but I'm still trying to learn and it's frustrating when we can't even out because there is someone jungling.

It's fine to play vs ai instead of 5v5 pvp.

Botlane normally has at least one ranged character. This matches up with the player created meta of having an Attack Damage Carry (ADC) and a support botlane.

If you're 1v2 top, and you don't have any ranged skills to poke and farm with, let the enemies push the minions to your turret and last hit the minions there. You'll gain a level lead always, and if you gain skill at last hitting, you'll earn an item lead too. Then once you have items and levels on them, attack and win.

Playing 1v2 is a lot closer to what playing against a person is like. Balancing mana costs, trading damage, and still getting your last hits in can be tough.

If you absolutely can't make an offensive impact on the game, just stay safe and clear waves of minions. Eventually, another lane will get an advantage and push in. Learning how to play passively is an important skill. Getting carried means not losing your lane until your team can help. Once another lane is winning, one of your opponent ai will abandon the lane to go help its team on their losing lane. Then you'll be 1 on 1, with a level lead.
