Playing with Diamonds/Masters/Platinum in Normals....

I'm a Silver V, but a rarely play any ranked games. Silver players are very easy to play against. However, I play normal games all the time. I'm always against players 3 or 4 divisions higher then me(Plats, diamonds, masters). I usual beat plats/diamonds in lane. Does this mean my normal MMR is around the plat/diamond range?

Normal Queue has different MMR than ranked.

It's a bit misleading because while your Normal MMR may be a bit higher than Silver V, chances are that Plat/Dias you find in Normals may have a lower Normal MMR that doesn't reflect their Ranked and Competitive MMR, as they may not play as hard or as often on normals.
