I haven't really fleshed this idea out yet, but it's a pretty simple concept so it shan't be too hard, methinks.

Basically, I want Configurable Champion Pools. Maybe tabs across the top that I could name and group champions in. One thing in particular that drives me bananas is how many champs I have that just don't suit me. Let's be honest here: I'm NEEEEEEEEVER going to play Maokai or Skarner; so why not have a way that I can filter them out altogether? They're still there in the main tab if, for some bizarre reason, I need them, but otherwise they're resting comfortably somewhere I don't have to look at them.

My dream QoL update? Champion pools.

I think the reason I'm not so fond of that is because you can simply search your champions utilizing the bar to find specific ones you're after. Don't get me wrong I know that's not what you're saying, but I feel like that ability is why something like that would never happen. Plus I know I'd do that and forget about the champion in the other tab.
